The History
A Traditional Turkish Kebab House
Although likely to have been eaten since mankind cooked on fire, the origin of doner kebab can be traced back as far as the 18th century and the Ottoman Empire.
Introduction of the Vertical Kebab
The first Doner would have been cooked horizontally over hot coals and it wasn’t until 1850 when İskender Efendi as a child had the innovative idea of roasting the meat vertically enabling the meat to be cooked evenly, remain moist and full of flavour.
“The Istanbul Restaurant “ Soho 1940
The Doner has been in the UK since the 1940’s when the “The Istanbul Restaurant” opened in Soho. Although roasting the meat vertically they would have served the meat plated with traditional side dishes like rice and salad.
It wasn’t until the 1970’s when Mahmut Aygun in his restuarant “Hasir” in Berlin when he began serving the meat in a warm flatbread that the market for this staple dish of Turkish cuisine really grew to the Doner Kebab that we know and love today.
